You all know about the new addition to my syndicate right ? Alright, you one-directional minds ! I did not have a baby ! I told you a while ago about my trip to India for my brother ’ s marry ? Yes, I am speaking about my sister-in-law, a new sibling and supporter within the syndicate .
The time I could spend with her was circumscribed considering the newly-wed chaos that happens in India and the fact that my travel was ephemeral. however, there were a couple of days when my brother had to rush out of the state for bring and my parents were out of township besides when I got to adhesiveness with the odoriferous, shy & gentle girlfriend 🙂 It was among the conversations we had during the time that she mentioned about a super promptly okra recipe. Because, let ’ s face it peeps ! Conversations with me would be incomplete without food and recipe speak, wouldn ’ thymine it ?
In the follow week, when my dad happened to bring home some young green gumbo from the farmer ’ mho grocery store, Raswitha ( my SIL ) carefully washed the gumbo, laid them out in a microwave safe serve and brushed each cooked okra meticulously with a liberal sum of ghee ( clarify butter ), seasoned them with salt and said “ Don ’ thymine skip the ghee. so, I went rogue on the recipe and used oil on half my gumbo ( for the benefit of my vegan consultation ) and ghee on the other half. While the ghee tasted heavenly to my indian palette, the olive oil was surprisingly as delectable and flavorful .

- Fresh green okra
- 1-2 tbsp olive oil or ghee
- Salt to season
- 1 tbsp paprika
- 1 tbsp coconut shavings (optional)
- Wash the okra and pat them dry
- Slit the okra along its length
- Place them in a microwave safe dish. Avoid overlapping and place them in a single layer.
- Microwave them on high for about 3 min. this might vary with the power of your microwave to a max of 4/5 min.
- Brush them all with olive oil or ghee.
- Sprinkle the salt and paprika.
- Garnish with coconut shavings and serve hot.
